Tasty Thursday – Sausage Jambalaya

I was introduced to My Daddy Cooks wonderful book thanks to twitter and have been trying out his recipes since just before Christmas.

There are so many wonderful recipes to choose from, but Sausage Jambalaya has become a firm family favourite and Kian just loves to help out!

Ingredients:

Olive Oil
12 Good Quality Pork Chipolatas, cut into 3 pieces
100g Cooking Chorizo, sliced into 1cm thick pieces
1 Onion, finely chopped or grated
1 Green Chilli, deseeded and chopped
2 Sticks of Celery, chopped
2 Garlic Cloves, chopped
1 Green Pepper and 1 Red Pepper deseeded and chopped into small squares
300g Long grain rice
400g Tin of chopped tomatoes
600ml chicken or vegetable stock
A dash of Worcester Sauce
A dash of Tabasco sauce (optional)
Salt & freshly ground pepper

Chopping the veg!

Instructions:

  • In a large frying pan, heat a good glug of Olive Oil on a medium heat.  Cook the chipolatas until they start to brown, then add the chorizo and cook for a further 90 seconds, while the chorizo releases red oils.
We only had big sausages and forgot to chop them but still looking good!

  • Add the onion, green chilli, celery and garlic, stirring for 2 minutes, then add the green and red peppers

  • Continue to stir everything for a further minute, then pour in the long grain rice, mixing it well with the other ingredients in the pan

Throw in the tomatoes, stock, a dash of Worcester sauce and the Tabasco

Cover, bring to the boil and simmer for 30 minutes until all the liquid has been absorbed.  (Check the pan from time to time and add a little water if necessary)

When the rice is cooked give it a really good stir to help mix in any remaining pieces of tomato that haven’t been absorbed.  Season with salt and pepper.
