My next door is super lovely and often leaves little gifts for me in our porch. Usually because I have mown her lawn or taken in a parcel from the postman. This week I was a little baffled when she left a huge carrier bag full of apples!
Wondering what on earth to do with them, I searched and searched my recipe books for ideas and one recipe really jumped out at me – Toffee Apple Muffins.
They sounded scrumptious and with Halloween and Bonfire Night just around the corner, seemed the perfect thing to make until I hit my first stumbling block – I couldn’t find baking toffee pieces anywhere. In the end I swapped them for butterscotch instead.
2 free-range eggs, lightly beaten
80g Caster Sugar
300g Plain Flour
2 tsp Baking Powder
1/2 tsp Salt
Pinch of Cinnamon
2 Apples (Cored and finely chopped)
200g Toffee pieces (can be replaced with fudge or butterscotch)
Preheat the oven to 190C/380F/Gas 5 and line a 12-hole muffin tin with paper cases.
Mix the eggs, sugar, milk and melted butter in a large bowl. Sift the flour, baking powder, salt and cinnamon into the bowl. Stir well to combine.
Add the chopped apple and lightly mix.
Using half of the mixture, quarter-fill each of the muffin cases with the mixture and top with a few pieces of toffee. Cover with the remaining filling so the cases are half full – I added a couple of butterscotch pieces to the top for added decoration.
Bake for 30-35 minutes until well risen and golden. Transfer to a wire rack to cool. Serve warm or cold.I have to say they are absolute delicious and my house smelled gorgeous for hours after baking them too and having made them once am confident that my little helpers can join me next time as they are super simple to do too.
